Make perfect round entremets and mousse cakes using these stainless steel ring moulds. 

How to use:

  1. Place on a lined tray
  2. (optional) Line mould with acetate sheet
  3. Fill partially with mousse
  4. Place inserts inside while mousse is still fluid
  5. Allow to set overnight in the freezer
  6. If lined with acetate, slide mousse cake out of mould and remove acetate sheet. If not lined with acetate, use a blowtorch to warm the sides of the mould and slide it off
  7. Coat the entremet with desired coating
